SUGAR FREE EASY KETO CHOCOLATE TRUFFLES

Homemade Sugar-Free Chocolate truffles are one of the easiest and quickest desserts you can make for the holidays. We love these chocolate truffles all year long, but especially for Christmas time!

They are perfect to display withketo cookieson a cookie platter. Making chocolate truffles sugar free isn't hard at all. Usingsugar free chocolate chipsand heavy cream is really all you need to make the scrumptious, creamy chocolate mixture.

Adding a bit of optional bourbon and vanilla, give these chocolate truffles a warmth when they melt in your mouth and a flavor that just lingers on your tongue.

The chocolate truffle got it's name because of it's slightly uneven round shape that resembles the edible fungus known as a mushroom truffle.

The latin word truffle means "tuber" which means anything with a round lumpy appearance. Don't worry, chocolate truffles do not contain mushrooms!

Simple Ingredients in a Chocolate Truffle

There's just 2 basic ingredients in traditional chocolate truffles; dark chocolate chips or milk chocolate bar or chips and heavy cream.

The center filling is usually a chocolate ganache, but many different variations can be made. A classic chocolate truffle is usually rolled in cocoa powder.

HOW TO MELT SUGAR FREE CHOCOLATE

There are two methods for melted chocolate. You can choose to use the stove top or the microwave and I have both methods for these truffles listed within the recipe below.

It's really a personal preference. Using the microwave though can cause you to burn and dry out your chocolate if you go a minute too long and the stove top method is a bit more forgiving.

On the stove top you can see once the chocolate is melted and there are no lumps after stirring. This is the method I prefer, but when you need to melt quickly the microwave might be a better option for you.

Directions for Stove Top Melted Chocolate

Place a medium sized glass bowl over a small saucepan filled half way with water. Bring the water to a boil and simmer on medium heat. Add the chocolate, heavy cream and butter to the bowl and stir continually until melted and smooth.

Remove from the heat and stir in optional bourbon, vanilla and salt. Place the mixture in the refrigerator to chill for 2 hours.

Directions for Microwave Melted Chocolate

In a medium sized microwave safe bowl combine the chocolate, heavy cream and butter. Microwave for 30 seconds then stir to combine, if needed heat in additional 15 second increments until smooth.

Stir in the bourbon if using, vanilla and salt. Place the mixture in the refrigerator to chill for 2 hours.

Best Sugar Free Chocolate Chips

I love using Lily's brand of sugar free chocolate chips because they don't contain artificial sugar alcohols like maltitol or sorbitol which can cause GI distress for most people. Lily's brand uses natural erythritol and stevia.

​If you're not a fan of using either of those sweeteners another brand I like is called Good Sam and their sugar free chocolate chips are made with Allulose which is also a natural sweetener I use in my recipes.

​Can I Add Sugar Free Sweeteners?

I don't think you need any sweetener for this chocolate truffle recipe since we are using sugar free chocolate chips that are already sweetened with stevia. But if decide it's just not sweet enough for your taste buds, try adding a sugar free liquid sweetener like Chocolate Monk Fruit sweetener or Vanilla Liquid Stevia.

Only add a little bit of chosen sweetener to this easy recipe then taste before chilling the chocolate mixture. You can always add more sweetener but you can't take it away if it's too sweet.

​It's often difficult to find any of these sugar free sweeteners at your localgrocery store, especially chocolate flavor, so I purchase most of the different flavors online through Amazon.

​I recommend a liquid sweetener because often times a granular low carb sweetener can cause the end result to be grainy or gritty and that is the last thing you want to have in your creamy texture and smooth ganache centers of your truffle.

​You could also use liquid Allulose or Lakanto Sugar Free Syrup.

TOOLS FOR LOW CARB CHOCOLATE TRUFFLES RECIPE

You don't need anything special to make these delicious, fudgey chocolate truffles and these items below are probably already in your kitchen.

Glass Bowl set- A medium sized glass bowl that can sit over a small saucepan linked to heat and melt the chocolate over simmering water.

Melon ScooporSmall Cookie Scoop- Either one will make it much easier to scoop an even amount of the mixture into a nice sized ball.

HOW TO MAKE KETO CHOCOLATES DAIRY FREE TRUFFLES

You could make this recipe below dairy free simply by swapping two ingredients. I would recommend swapping the heavy cream with canned coconut milk, the creamy part that is solid from the top of the can.

It is very similar to heavy cream because of its high fat content. It's a much better option than using unsweetened almond milk for this recipe.

You can swap the butter with coconut oil and these chocolate truffles will be dairy free and just as delicious!

Assembly

  • Line a baking sheet pan with parchment paper. After 2 hours use a small cookie scoop to scoop out the mixture into 20 small balls placed onto the pan. Roll in cocoa powder and place into an airtight container then refrigerate until ready to consume. Enjoy chilled or room temperature.
